Gricia Sauce (with guanciale and Pecorino Romano PDO) is a flavorful condiment typical of Roman folk cuisine, made with PDO Pecorino Romano cheese, guanciale, and pancetta. Considered the ancestor of Amatriciana before tomatoes were introduced, it’s perfect for dressing bucatini, rigatoni, or "pasta alla chitarra". It's also excellent for enhancing risottos.

How to use: pour directly onto just-drained pasta. We recommend stirring well before use. For better distribution, heat gently and toss with the pasta cooking water. Also great for finishing risottos.
Did you know? The origin of the name “gricia” is ancient and not entirely certain. It is thought to derive from the Latin term griscium, which referred to the frock worn by master bakers to keep their clothes from getting floury. In popular dialect, “pasta alla gricia” means “dirty pasta”, referring to the rich and flavorful topping.
