Anchovies in oil are a gastronomic excellence that expresses the richness of the sea in every bite. Carefully selected, the fresh anchovies are subjected to a salting process and subsequent preservation in high quality extra virgin olive oil. For Sunday we propose this recipe:
Ingredients:
320g of spaghetti
100g of anchovies in oil, drained and chopped
60ml of extra virgin olive oil
2 cloves garlic, finely chopped
Freshly ground black pepper, to taste
Red chili pepper, to taste (optional, for a spicy touch)
50g taralli, crumbled
Fresh parsley, finely chopped
Salt to taste.
Instructions:
Bring a pot of salted water to a boil and cook the spaghetti according to the package directions. Drain them al dente, keeping a little of the cooking water.
In a large skillet, heat the extra virgin olive oil over medium heat. Add minced garlic and, if desired, red chili pepper for a spicy touch. Sauté the garlic until golden.
Add the chopped anchovies in oil to the pan and cook for about 2-3 minutes, stirring gently to blend the flavors.
Add the cooked spaghetti to the pan with the anchovies. Season with salt and freshly ground black pepper to taste. Mix well, adding a little spaghetti cooking water if necessary to obtain a creamy consistency.
In the meantime, crumble the taralli roughly.
Serve the spaghetti with anchovies on individual plates, sprinkling the surface with crumbled taralli and chopped parsley. Add a drizzle of extra virgin olive oil, if desired.
