Gemma is a Golden Ale craft beer produced with the best Italian durum wheat semolina pasta and the best barley malt. The production process of artisanal pasta involves a certain percentage of excess which, despite being of excellent quality from an organoleptic and nutritional point of view, cannot be packaged. With a view to valorising good raw materials and fighting food waste, this paste is used to produce a craft beer with a primitive and sunny appearance which reveals a full, intense, unmistakable flavour. A contemporary yet traditional beer that has its roots in the principles of the circular economy typical of the peasant culture of the past, when nothing was really wasted.
